Foodie Friday: Smooshed Smashed Red Potatoes

I love me some baby red potatoes! 

What you'll need:

One bag red potatoes (or Yukon Gold potatoes are good too) 
Olive oil (enough to cover each potato lightly) 
Herbs de Provence 
Parmesan cheese (or you could substitute with heavy garlic, rosemary and thyme, Italian spice mix, ranch mix, taco seasoning, Mexican style cheese melted, or seriously whatever you like!) 

What to do with it all: 

Chop baby potatoes in halves. 
In a bowl, drizzle olive oil over potatoes until lightly coated. 
Pour in whatever seasoning you chose, I added 4 pinches of Herbs de Provence and a 1/2 cup of Parmesan cheese for the potatoes pictured here. 
Stir them all together till they're best friends. 
Cook on 350 for 45 minutes, depending on how crisp you want them. 
Pull them out of the oven and SMASH THEM! 

Like a lot of my foodie posts, the food isn't gorgeous, but trust me it is delicious
