Foodie Friday: Lemon Raspberry Cookies

Ever feel like making some cookies but you don't want to get stuck with dozens of them. You don't want to take over an hour to make and clean them up. You don't want something super sweet but you need a light little snack? I have a great cookie recipe for you.


A couple of weeks ago, my daughters were bored and getting restless. It was rainy and cold so we were staying inside. I decided I would help them bake something. I never do that because of the mess! But I dug up the courage to let them help. We looked in the pantry for ingredients, and found that we didn't have the stuff to make our regular chocolate chip cookies, so I decided to make a recipe up and see how it turned out.


Lemon Raspberry Cookies

What you need:
1 lemon cake mix
1 TBS flour
1/3 cup veggie oil
2 eggs
1/2 - 1cup raspberries


First pre-heat your oven to 375. Pour your cake mix, flour, oil, and eggs into a mixer. Mix until it's all combined. Add the desired amount of raspberries. We used about a half cup but I would have been happy with a little more too. Mix well. Bake cookies for 7-8 minutes and then let them cool completely.

I added a little glaze frosting on top of mine. They turned out tart and needed a little extra sugar. They are good either way though, it's totally based on your preference. So here's the glaze recipe...it's super easy.

1 Cup powdered sugar
3-4 Tbs milk

Thats it. Mix it until you get the consistency that you want, then just frost it right on top of the cooled cookies. It adds just a little extra sweet to the tart. So yummy.
