Foodie Friday: Melty Pesto Tomato Grilled Cheese Sandwich


I don't know if y'all will be able to find a bigger pesto fan than me. I tried it as a little girl on a pesto pizza my aunt bought, I've been in love with the stuff ever since. 

Here's a tip: Just enjoy it, don't go looking up the calories on this delicious spread. It will only fill you with guilt and regret. 

Pinterest really inspires me in the kitchen. All of these pins made me drool for a good pesto sandwich. Looking at some of the food blogs and pictures gets me out of the "usual" and into trying new flavors! We loooooove grilled cheese at our house. What's not to love about bread, cheese, and butter?

To make this sandwich you'll need:

A loaf of french bread
jar of pesto
fresh tomato, thinly sliced
shredded mozarella cheese (or however you like it) 
butter!!!

To create the deliciousness: 

Lather (lather, I said!) your bread with butter on one side and with the pesto on the other.
Lay the bread into the pan to get that golden crispy top. 
Add the cheese, tomato, and the top piece of buttered bread. 
Flip.
Cook until it's extra crispy!
